Ingredients
  

  • 1 pound red jalapeño peppers chopped
  • 6 garlic cloves
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1/2 cup water
  • 1/3 cup distilled white vinegar

  • Glass jar or airtight container
  • Fine mesh strainer
  • Measuring cups and spoons

Method
 

  1. Wash the peppers thoroughly and remove the stems.
  2. Roughly chop the peppers and garlic cloves.
  3. Add the peppers, garlic, sugar, salt, and water to a blender.
  4. Blend until the mixture becomes smooth and thick.
  5. Transfer the mixture to a clean glass jar or container.
  6. Cover loosely and let it ferment at room temperature for 3-5 days, stirring once daily.
  7. Pour the fermented mixture into a saucepan.
  8. Add the vinegar and stir well.
  9. Simmer over medium heat for 10-15 minutes.
  10. Remove from heat and let cool slightly.
  11. Blend again until completely smooth.
  12. Strain through a fine mesh sieve for a silky texture if desired.
  13. Transfer the sauce into sterilized bottles or jars. Refrigerate before serving.
