- Peel and dice mango. Remove stems from habaneros. Roughly chop onion and garlic.
- Heat olive oil in a small saucepan over medium heat. Add onion and cook for 3-4 minutes until soft.
- Add garlic and habanero peppers. Cook for 1-2 minutes until fragrant.
- Add mango, vinegar, honey, lime juice, water, and salt. Stir to combine.
- Reduce heat to low. Simmer for 10-12 minutes, stirring occasionally, until mango is completely soft.
- Remove from heat. Let cool 5 minutes. Transfer to a blender and blend until completely smooth.
- Taste and adjust salt, lime, or honey as needed. Pour into a glass jar and serve.
