- Finely mince chipotle peppers in adobo, finely minced and measure out adobo sauce (from the can) from the can. Set aside.
- In a small saucepan over medium-low heat, combine raw honey, minced chipotle peppers, adobo sauce, garlic cloves, minced, soy sauce, apple cider vinegar, and smoked paprika. Stir well to combine.
- Let the mixture gently simmer, stirring occasionally, until slightly thickened and fragrant, about 5-6 minutes . Do not boil.
- Remove from heat. Stir in unsalted butter until fully melted and the glaze is glossy and smooth.
- Season with salt and black pepper. Taste and adjust - more honey for sweetness, more chipotle for heat, a splash more vinegar for brightness.
- Let the glaze rest for 5 minutes to thicken slightly before using as a glaze, dipping sauce, or marinade.
