Ingredients

  • 1/2 cups raw honey
  • 2 chipotle peppers in adobo finely minced
  • 1 tablespoons adobo sauce from the can
  • 3 garlic cloves minced
  • 1 tablespoons soy sauce
  • 1 tablespoons apple cider vinegar
  • 1 tablespoons unsalted butter
  • 1/2 teaspoons smoked paprika
  • 1/3 teaspoons salt
  • 1/3 teaspoons black pepper

Equipment

  • Small saucepan
  • silicone spatula or mini whisk
  • Glass storage jar

Method

  1. Finely mince chipotle peppers in adobo, finely minced and measure out adobo sauce (from the can) from the can. Set aside.
  2. In a small saucepan over medium-low heat, combine raw honey, minced chipotle peppers, adobo sauce, garlic cloves, minced, soy sauce, apple cider vinegar, and smoked paprika. Stir well to combine.
  3. Let the mixture gently simmer, stirring occasionally, until slightly thickened and fragrant, about 5-6 minutes . Do not boil.
  4. Remove from heat. Stir in unsalted butter until fully melted and the glaze is glossy and smooth.
  5. Season with salt and black pepper. Taste and adjust - more honey for sweetness, more chipotle for heat, a splash more vinegar for brightness.
  6. Let the glaze rest for 5 minutes to thicken slightly before using as a glaze, dipping sauce, or marinade.
