Ingredients
  

  • 2 large ripe avocados pitted and peeled
  • 3 tbsp full-fat Greek yogurt
  • 1 clove fresh garlic
  • 2 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh cilantro or parsley optional
  • 1-2 tbsp cold water to adjust consistency

Method
 

  1. Halve the avocados, remove the pits, and scoop the flesh into a food processor or blender.
  2. Add garlic, lemon juice, olive oil, salt, and black pepper.
  3. Blend on high until completely smooth, scraping down the sides as needed.
  4. Add Greek yogurt and blend again for 20-30 seconds until light and fluffy.
  5. Add fresh herbs if using, then pulse 2-3 times to incorporate.
  6. Taste and adjust salt, lemon, or garlic to your liking.
  7. Transfer to a serving bowl, drizzle with olive oil, and serve immediately.
