Method
- Roughly chop the chilies and garlic cloves into large pieces.
- Add chilies, garlic, vinegar, salt, and sugar to a blender or food processor.
- Blend on high for 60-90 seconds until completely smooth.
- Pour the blended mixture into a small saucepan and bring to a gentle simmer over medium-low heat.
- Simmer for 5-7 minutes, stirring occasionally, until slightly deepened in color and aroma.
- Remove from heat and let cool for 10 minutes.
- Taste and adjust - add more salt for depth, sugar to soften heat, or a splash of vinegar for extra tang.
- For a smooth sauce, strain through a fine mesh sieve, pressing solids. For a chunkier texture, skip this step.
- Pour into a clean glass bottle or jar, seal, and refrigerate. Rest at least 1 hour before serving for best flavor.
- Rest time is optional but highly recommended - letting the sauce sit for 1 hour (or overnight) allows the flavors to mellow and deepen significantly.
